Traditional “Afternoon Tea” for Mother’s Day

Mother’s Day is one of my favorite holidays. Not only because I am blessed to be a mother and my family spoils me, but also because I love spoiling all of my wonderful mother-figures too! Moms, grandmas, sisters, aunties, friends… thank you for having a positive influence on me and everyone living in our sweet Palos Verdes Community!

 

Let’s show some love to these wonderful mother-figures in our lives on Mother’s Day and really the whole year through! Gather your family and friends to spoil your special loves with this beautiful traditional “Afternoon Tea” filled with tea sandwiches, sweets, spreads, and of course tea and hot chocolate! SALMON WITH GARLIC CONFIT

Slow cooking garlic in olive oil yields two amazing results: 1- tender and mild flavored garlic cloves, and 2- flavored oil that can be used in everything*! In this recipe, I will walk you through how to make this delicious Garlic Confit and teach you how to turn it into a flavorful addition to your salmon.

GREEN IRISH SODA BREAD

Soda bread is bread that is leavened with baking soda instead of the yeast. This bread was first found in Ireland in the 1830’s, and continued to be a staple in the community mainly as a practical necessity. Today this bread is baked around the world in celebration of St. Patrick’s Day. Enjoy it with soups and stews, or slice it as toast smeared with delicious Irish butter. Happy St. Patrick’s Day!

SALADS IN A JAR

Spring into spring with this simple salad refresh! 

I think of salads as having six main ingredients. The first two are always leafy greens and sliced Persian cucumbers, but the other four can be almost anything you want!

Also, here’s a tip to make life a little easier…Whenever you make a salad, get a few 1-quart mason jars and fill them with the contents of the salad for you to enjoy later, making sure that the wettest ingredients are at the bottom of the jar. Here are two of my favorite salad combinations in a large bowl size as well as quantities for filling a mason jar.

RUSTIC APPLE TART

Raise your hand if you’re intimidated to make an apple pie!

Don’t worry, apple pies intimidate me too! Did you know there is a simplified way you can make almost any fruit pie? It’s called a galette, although I prefer calling it a “Rustic Pie”. Rustic means plain and simple so making a pie that tastes incredible but that is “plain and simple” to make, should take some of the intimidation away. Try it! And let me know how it goes.
